I love eggs. Over-easy, scrambled, hard-boiled, poached, baked, they’re great with veggies, salty meats, cheese - they really are a perfect food. So you can imagine how tempted I was to buy a giant ostrich egg today. These things are about 6-7″ tall and maybe 5″ wide in the middle, with a sturdy, shiny shell. I’d love to make a giant omlet, or maybe a deviled egg, or maybe a really big quiche. I could also make a huge souffle, or a couple dozen egg salad sandwiches. What would you make?

The egg cartons on the right would probably fit medium chicken eggs, so you get an idea of how big the ostrich egg is.
